What to Eat in Haryana

1. Carrot Raita :
Carrot Raita is very healthy and tasty preparation of carrot and curd. Carrot raita is little sweet because of the carrot inside. Carrot raita is done woth the red carrot but it can be prepared with ooty carrot (orange carrots) as well.To make carrot raita we should grate the carrot. We can add onion and green chili as well while preparing carrot raita.

2. Bottlegourd Raita :
Lauki (bottlegourd) as it is known i hindi is a very good vegetable for health. Lauki raita is very different curd recipe. It is different and good in taste. Lauki raita is favorite to all of us in family. People who do not like bottle gourd, might like it as a raita. It is very easy to make as well. Here is the complete recipe to make lauki raita.

3. Raw Mango Sabzi :
Raw mango is used for chutneys and sometimes to make sabzi as well. During summer, mom is used to make the khatta meetha rw mango gravy sabzi which is mostly done in the villages of west UP and Haryana. That is why I will list this raw mango sabzi in both UP and Haryana Cuisines.

4. Matar Chutney :
Matar ki chutney, a not so common chutney recipe but it is often prepared in haryanvi kitchens. People from Haryana are fond of chutneys. They try making chutney from different ingredients. During my stay in this state, i learnt few new recipes. Matar ki chutney wasa new recipe for me. I thought of posting this recipe as soon as i was back to work.

5. Hare Chane ki Sabzi :
Hare Chane ki Sabzi or Choliye ki sabzi is cooked during winter time as that time hare chane is easily availble. Hare Chane ki sabzi can be cooked with potatoes. THere can be many variations to make hare chane ki sabzi. This recipe is just one of them.

6. Amla Chutney :
A super simple and super healthy chutney recipe which i tried at home and i kept it in haryanvi chutney recipes because i got an idea to prepare amla chutney after seeing the experiments done for chutneys in haryanvi kitchens.Amla chutney just turned very tastey. Infact you can use it in chats also.

7. Besan Halwa :
Very easy and quick recipe is besan halwa. I have made besan halwa a lot, specially during winter. In my home, if someone will have cold, mom will prepare besan halwa and will add black peppercorn powder and white peppercorn powder. It works as a remedy for cold.

8. Potato Raita :
Aloo raita is a quick and easy dish to prepare. Boiled potato is used to make aloo raita. We can use chopped onion and green chili while making aloo raita. We should mash the boiled potatoes before using it to make aloo raita.

9. Lapsi :
Lapsi is a sweet dish which is made of broken wheat (Wheat dalia). Traditional, lapsi is cooked with jaggery but now a days, sugar is often used to make lapsi. The taste differs a lot and me and family like the jaggery lapsi than the sugar lapsi.Lapsi is popular in West UP, Haryana, Rajasthan and Gujarat. Gujarati Lapsi is a little different then this Lapsi recipe. Lapsi is cooked only with three basic ingredients Broken wheat, jaggery and ghee. Yes, water is added also. We can add dry fruits also in it. I prefer to dissolve the jaggery or sugar before using them in the recipe. Few people use them directly.

10. Guava Chutney :
Amrood chutney, I first saw this chutney getting prepared in a haryanvi kitchen. In Haryana, people are fond of chutneys. Amrood chutney is not a popular chutney, but this is an amazing chutney. This is no where less then the coriander chutney.Amrood chutney can be served with any chaat instead of coriander chutney. It is good to have even with the sandwich. Whether amrood chutney is prepared with raw guava or the riped guava, the taste is same. One can actually smell amrood in the ready chutney.

11. Gond ke Ladoo :
Gond ke Ladoo is made during winter season. In north India, Gond Ladoo is given to the ladies after child birth. It is supposed to provide strength to the body. We can mix the dry fruits in gond ke ladoo while making. Making Gond Ladoo is easy but it take time to make. Have patience while preparing Gond Ladoo as it is not a quick recipe. 12. Pude :
Puda is very close to pancake from western cuisine. Puda is made by deep frying and tawa frying. In my home, Puda is done once a month for sure on Amavasya particularly. I do not know the reason but mom is used to do it and that is why everybody waits for that particular day to come to have these puda. It is cooked in breakfast.Puda is very popular on other festivals, but on other festivals it is deep fried just like pakodas. This puda is tawa fried and really easy and quick to do. In the authentic recipe, there is on baking powder added but I prefer to add the baking powder to make puda crispy. I add shallow fried dry fruits in the batter to make pudas but that also is optional. Also Puda can be made using sugar. For 1 cup of Wheat flour, 1/4 cup of sugar should be added.
